Turmeric Mashed Sweet Potatoes
- 2 large sweet potatoes, cut into chunks
- A swish of olive oil
- 1-2 teaspoons turmeric
- 2 cloves garlic, minced
- 2 cups vegetable broth

Lemon Dressing
- 1/4 cup lemon juice
- 1/3 cup olive oil
- 1 small clove garlic
- 2 teaspoons agave syrup
- 1/4 cup parsley leaves
- 1/4 teaspoon salt (more to taste)
Bowl Assembly
- Poached, scrambled, or fried eggs (4 eggs for 4 servings)
- Brown rice or quinoa (cooked, about 2 cups)
- Arugula, spinach, or mixed greens (about 4 cups)
- Pistachios or other nuts for topping (1/4 cup)
Instructions
- Turmeric Mashed Sweet Potatoes: Heat the olive oil in a skillet over medium-high heat. Add the sweet potato chunks and toss them with the turmeric to coat evenly. Add the minced garlic and pour in the vegetable broth. Let the mixture simmer until the potatoes are very soft and the liquid has mostly evaporated. Transfer the potatoes to a small bowl and mash them until smooth. Season with salt and pepper and optionally add a little cream for extra richness.
- Lemon Dressing: Combine the lemon juice, olive oil, small garlic clove, agave syrup, parsley leaves, and salt in a blender or food processor. Pulse until well combined and smooth. Taste and adjust seasoning if necessary.
- Bowl Assembly: Toss the greens with some of the lemon dressing to lightly coat them. Optionally stir a bit of dressing into the mashed sweet potatoes for extra flavor. In each serving bowl, layer the dressed greens, a scoop of brown rice or quinoa, and a generous portion of the turmeric mashed sweet potatoes. Top each bowl with a poached, scrambled, or fried egg. Drizzle with more dressing and sprinkle with pistachios or your choice of nuts for a crunchy finish.

- You can use any preferred greens like arugula, spinach, or mixed greens depending on availability and taste.
- The eggs can be cooked according to your preference: poached, scrambled, or fried all work well.
- If cream is not desired, mashed sweet potatoes can be made lush by simply mashing thoroughly with some olive oil instead.
- Adjust the amount of turmeric according to your spice preference, but it provides anti-inflammatory benefits.
- Use gluten-free grains like quinoa for gluten intolerance or brown rice for a nutty flavor.
- For vegan variation, omit eggs and add more nuts or seeds for protein.
