Ingredients
Marinade:
1 tablespoon sesame oil
1 teaspoon grated fresh ginger
2 cloves garlic, finely chopped
2 tablespoons packed brown sugar
1/4 cup soy sauce
1/2 cup pineapple juice
1 cup teriyaki sauce
Chicken and Pineapple:
1 ripe pineapple, cut into circles
4 pieces boneless, skinless chicken thighs or breasts
Garnish:
Chopped green onions
Toasted sesame seeds
Instructions
- Prepare the Marinade: In a medium bowl, whisk together sesame oil, grated ginger, chopped garlic, brown sugar, soy sauce, pineapple juice, and teriyaki sauce. Stir until the sugar dissolves and the marinade is well combined.
- Marinate the Chicken: Place the chicken in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it’s fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for maximum flavor.
- Prepare the Pineapple: While the chicken is marinating, cut the pineapple into thick circles and set aside.
- Grill the Chicken and Pineapple: Preheat your grill to medium-high heat. Once hot, remove the chicken from the marinade (discard the marinade) and grill the chicken for about 6-7 minutes per side for thighs (5-6 minutes for breasts), or until the internal temperature reaches 165°F (74°C). Grill the pineapple for about 2-3 minutes per side until grill marks appear and the pineapple softens.
- Assemble the Stack: Layer the grilled chicken and pineapple on a serving plate. Start with a piece of chicken, then stack a grilled pineapple circle on top. Repeat for additional layers if desired.
- Garnish and Serve: Garnish with freshly chopped green onions and toasted sesame seeds. Serve immediately with your choice of sides like rice, vegetables, or a light salad.
Notes
Add heat to the marinade with red pepper flakes or chopped jalapeños for a spicy twist.
For added nutrition, layer grilled vegetables like bell peppers or zucchini between the chicken and pineapple.
If you don’t have fresh pineapple, canned pineapple can be used, but be sure to drain it well before grilling.
If you don’t have a grill, you can cook the chicken and pineapple in a grill pan or under the broiler.
