Carrots and Seasoning
- 1 lb. petite carrots, peeled and trimmed
- 1 tablespoon avocado oil
- ½ teaspoon ground coriander
- ½ teaspoon Aleppo pepper
- ½ teaspoon kosher salt
Harissa Glaze
- 1 tablespoon harissa paste (adjust to taste)
- 1 tablespoon honey
Whipped Feta
- 1 garlic clove
- 8 ounces feta cheese, crumbled or broken into pieces
- ½ – ¾ cup Greek yogurt or sour cream (start with ½ cup and add more if needed)
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 2 tablespoons extra virgin olive oil
Garnish
- Chopped cilantro or mint (for topping)
Instructions
- Preheat Oven: Position a rack in the center of the oven and preheat it to 425ºF to ensure even, high-heat roasting of the carrots.
- Toss Carrots with Seasoning: Place the peeled and trimmed carrots on a parchment-lined baking sheet. Drizzle with avocado oil. In a small bowl, combine ground coriander, Aleppo pepper, and kosher salt; sprinkle the seasoning over the carrots. Toss to coat evenly and arrange carrots in a single layer for optimal roasting. Roast for 20-25 minutes, flipping halfway through; thicker carrots may require up to 35 minutes. Check tenderness with a fork.
- Make Whipped Feta: While carrots roast, mince the garlic clove finely in a food processor. Add the crumbled feta cheese, ½ cup Greek yogurt or sour cream, lemon zest, lemon juice, and olive oil. Pulse until a thick, spreadable mixture forms. If too thick or salty, add the remaining ¼ cup yogurt/sour cream to adjust texture. For thinner whipped feta, pulse for an additional 20-60 seconds carefully to avoid becoming watery. Transfer whipped feta to a serving platter.
- Baste with Harissa Glaze: In a small bowl, mix harissa paste and honey. When carrots are tender, remove from the oven and baste evenly with the harissa-honey glaze. Return to the oven and roast an additional 5-7 minutes until the glaze caramelizes and coats the carrots beautifully.
- Serve: Allow the roasted carrots to cool slightly. Arrange them over the whipped feta spread. Sprinkle with chopped fresh cilantro or mint for a fresh herbal touch before serving.

- Use petite or thin carrots for even roasting and tenderness; thicker carrots may require longer cooking time.
- Adjust the amount of harissa paste based on your preferred spice level.
- If feta is too salty, adding more yogurt or sour cream balances the flavor.
