Vegetables
- 1 pound potatoes, yellow or white, peeled and diced

Meat
- 1 pound 90% lean ground beef

- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika

- 1 teaspoon oregano
- 1 teaspoon salt

Instructions
- Prepare the potatoes: Peel and dice the potatoes into bite-sized pieces to ensure they cook evenly and quickly when sautéed.
- Sauté aromatics: Heat 1 tablespoon of canola oil in a large skillet over medium heat. Add the diced onion, bell pepper, jalapeno, and minced garlic. Cook until softened and fragrant, about 4-5 minutes.
- Cook potatoes: Add the diced potatoes to the skillet, stirring to combine with the vegetables. Cook for about 10-12 minutes, stirring occasionally, until the potatoes start to become tender and slightly golden.
- Brown the ground beef: Push the vegetables and potatoes to the side of the skillet and add the ground beef. Break it apart with a spatula and cook until browned and cooked through, about 8-10 minutes.
- Season the mixture: Mix the potatoes, vegetables, and beef together. Stir in Worcestershire sauce, garlic powder, smoked paprika, cumin, oregano, salt, and fresh black pepper. Cook for an additional 3-5 minutes, allowing flavors to meld and ensure potatoes are fully cooked.
- Garnish and serve: Remove from heat, stir in the chopped fresh cilantro for a burst of fresh flavor, and serve hot.
Notes
- For less spice, remove the seeds from the jalapeno before mincing.
- You can substitute canola oil with olive oil or vegetable oil depending on preference.
- If you prefer a softer potato texture, cover the skillet with a lid while cooking.
- Adjust seasoning to taste before serving.
