Oysters
- 12 oysters (in the shell)
Savory Butter
- 2 sticks unsalted butter (equivalent to 1 cup or 226 grams)
- 2 tbsp parmesan cheese (grated)
- 2 cloves garlic (minced)
- 2 tbsp parsley (finely chopped)
- 2 tbsp chives (finely chopped)
- 2 tbsp shallots (finely diced)
- Salt and pepper (to taste)

Instructions
- Preheat the Grill: Fire up your BBQ or gas grill to a medium-high direct heat, preparing it for grilling the oysters.
- Clean the Oysters: Rinse the oysters under cold water to remove any grit or debris from the shells, ensuring they are clean before shucking.
- Position the Oyster: Hold each oyster with the curved side of the shell facing down and the flat side facing up for easier shucking.
- Shuck the Oyster: Insert a shucking knife into the hinge of the oyster shell and twist to separate the top and bottom shells carefully.
- Cut the Muscle: Run the knife along the inside of the flat shell to cut the top muscle, then carefully pop off the top shell.
- Loosen the Oyster: Gently scrape under the oyster meat to loosen it from the bottom shell to enable easy tasting later.
- Grill the Oysters: Place the oysters in their bottom shells directly over the grill heat and cook for about 5 minutes until the oyster meat is firm and hot.
- Add Savory Butter: Spoon about one tablespoon of the prepared savory butter onto each oyster. Allow the butter to come to a gentle boil on the oysters.
- Remove and Rest: Carefully remove the oysters from the grill once the butter is bubbling and let them rest for 5 minutes to cool slightly and let flavors meld.
- Prepare Savory Butter: While oysters grill, melt the butter in a small pot over medium heat. Add shallots, chives, parsley, garlic, parmesan, salt, and pepper. Stir continuously until everything is fully combined and fragrant. Remove from heat and set aside.
- Serve: Serve the grilled oysters warm, optionally with hot sauce for added heat.

- Do not discard the oyster liquor inside the shell when shucking; it adds natural briny flavor while grilling.
