Chicken and Marinade
- 2 lb. chicken thighs, boneless, skinless
- 1/2 cup soy sauce
Mango Marinade Blend
- 2 mangos, peeled and pitted
- 3 garlic cloves
- 1/2 tsp fresh ginger, grated
- 2 tbsp water, or more as needed

- Fresh cilantro, for garnish
Instructions
- Prepare the Marinade: In a blender or food processor, combine the peeled mangos, garlic cloves, grated fresh ginger, soy sauce, and water. Blend until smooth to create a flavorful mango marinade that balances sweet and savory notes.
- Marinate the Chicken: Place the boneless, skinless chicken thighs in a large bowl or resealable plastic bag. Pour the mango marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to deeply infuse the meat.
- Preheat the Grill: Heat your grill to medium-high heat, about 375-400°F (190-205°C). Ensure the grates are clean and lightly oiled to prevent sticking.
- Grill the Chicken: Remove the chicken thighs from the marinade, letting excess drip off. Place the thighs on the hot grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred and cooked through.
- Rest and Garnish: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes to retain juices. Garnish with fresh cilantro leaves before serving to add a fresh, herbal brightness.
Notes
- For added flavor, you can reserve some marinade and brush it on the chicken during the last few minutes of grilling, but ensure to boil the marinade first to eliminate raw chicken bacteria.
- If you don’t have fresh mangoes, frozen or canned mango pulp without added sugar can be used as a substitute.
- Adjust the ginger quantity to your liking for more or less spiciness.
- Serve this grilled chicken with a side of steamed rice, grilled vegetables, or a fresh salad for a complete meal.
- Marinating overnight maximizes tenderness and depth of flavor.
