1/2 cup mayonnaise
2 tablespoons sour cream
1 tablespoon Dijon mustard (optional for extra flavor)
2 garlic cloves, minced
1 tablespoon fresh lemon juice
1/2 teaspoon dried oregano
Salt and pepper to taste
Instructions
For the Chicken:
-
Preheat your grill or grill pan to medium-high heat.
-
In a large bowl, toss the chicken cubes with olive oil, paprika, garlic powder, and salt until evenly coated.
-
Thread the chicken cubes onto skewers (optional) or leave them as individual pieces for grilling.
-
Grill the chicken for 6-8 minutes, turning occasionally, until golden brown and cooked through, with an internal temperature of 165°F (75°C).
-
Remove from the grill and let the chicken rest for a few minutes.
For the Creamy Garlic Sauce:
-
In a small bowl, combine mayonnaise, sour cream, Dijon mustard (if using), minced garlic, lemon juice, and oregano.
-
Season with salt and pepper to taste. Blend the mixture for a smoother consistency if preferred.
To Serve:
-
Serve the grilled chicken bites warm with the creamy garlic sauce on the side for dipping, or drizzle the sauce over the chicken for extra flavor.
Notes
Spicy option: Add cayenne pepper to the chicken marinade or mix some sriracha into the garlic sauce for a spicy twist.
Herb variations: Fresh parsley, basil, or thyme can be added to the sauce for extra freshness.
Vegetable pairing: Serve with grilled vegetables like bell peppers, zucchini, or onions for a complete meal.
