  • Total Time: 25-30 minutes
  • Yield: Serves 4

Ingredients

For the Chicken:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon salt

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons sour cream

1 tablespoon Dijon mustard (optional for extra flavor)

2 garlic cloves, minced

1 tablespoon fresh lemon juice

1/2 teaspoon dried oregano

Salt and pepper to taste

Instructions

For the Chicken:

  1. Preheat your grill or grill pan to medium-high heat.

  2. In a large bowl, toss the chicken cubes with olive oil, paprika, garlic powder, and salt until evenly coated.

  3. Thread the chicken cubes onto skewers (optional) or leave them as individual pieces for grilling.

  4. Grill the chicken for 6-8 minutes, turning occasionally, until golden brown and cooked through, with an internal temperature of 165°F (75°C).

  5. Remove from the grill and let the chicken rest for a few minutes.

For the Creamy Garlic Sauce:

  1. In a small bowl, combine mayonnaise, sour cream, Dijon mustard (if using), minced garlic, lemon juice, and oregano.

  2. Season with salt and pepper to taste. Blend the mixture for a smoother consistency if preferred.

To Serve:

  1. Serve the grilled chicken bites warm with the creamy garlic sauce on the side for dipping, or drizzle the sauce over the chicken for extra flavor.

Notes

Spicy option: Add cayenne pepper to the chicken marinade or mix some sriracha into the garlic sauce for a spicy twist.

Herb variations: Fresh parsley, basil, or thyme can be added to the sauce for extra freshness.

Vegetable pairing: Serve with grilled vegetables like bell peppers, zucchini, or onions for a complete meal.
