Instructions

  2. Combine Ingredients: In a food processor, add chickpeas, 1/3 cup reserved chickpea liquid, tahini, olive oil, spinach, parsley, lemon juice, green onion, garlic, cumin, and salt.
  3. Blend Until Smooth: Process the ingredients until the mixture is creamy and smooth, stopping to scrape down the sides as needed. Add more reserved chickpea liquid a tablespoon at a time if the hummus is too thick or not blending easily.
  4. Adjust Seasoning: Taste the hummus and add more salt or lemon juice if desired to balance flavors.
  5. Serve and Garnish: Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with chopped herbs, walnuts, and sesame seeds for garnish.
