Phyllo Layers
- 8 sheets of phyllo dough
- 1 cup unsalted butter, melted
Custard Filling
- 1 cup semolina flour
- 3 large eggs
- 3/4 cup granulated sugar
- 2 cups whole milk
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- Pinch of salt
Toppings
- 1/2 cup honey, warmed
- 2 tbsp sesame seeds, toasted
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish thoroughly to prevent sticking.
- Layer phyllo base: Lay one sheet of phyllo dough into the greased dish and generously brush it with melted butter. Repeat this process with 6 more sheets, stacking them neatly to create a crispy base.
- Prepare custard filling: In a mixing bowl, whisk together the semolina flour, eggs, granulated sugar, whole milk, ground cinnamon, ground nutmeg, and a pinch of salt until the mixture is smooth and well combined.
- Assemble pie: Pour the semolina custard mixture evenly over the layered phyllo base in the baking dish. Then, top with the remaining phyllo sheet, brushing each layer with melted butter. Lightly score the top layer with a sharp knife to allow steam to escape during baking.
- Bake the pie: Place the pie in the preheated oven and bake for 40 to 45 minutes, or until the top turns golden brown and the custard is set. Once done, allow the pie to cool in the dish for about 10 minutes.
- Add toppings and serve: Drizzle the warmed honey evenly over the pie’s surface and sprinkle with toasted sesame seeds. Slice the pie and serve it warm or at room temperature for the best flavor and texture.

- Ensure the phyllo dough is kept covered with a damp towel during assembly to prevent it from drying out.
