Ingredients
Sauce
- 1½ cups bolognese sauce
- 3-4 tablespoons heavy cream
- 2 tablespoons tomato paste
- Salt and pepper to taste
Pasta
- 2 cups prepared gnocchi (homemade or store-bought)
- Grated parmesan cheese, for serving
Instructions
- Blend the sauce: Combine the bolognese sauce, tomato paste, and heavy cream in a blender. Pulse until the mixture is fairly smooth but still slightly chunky to retain texture.
- Heat the sauce: Pour the blended sauce into a saucepan and warm over medium heat. Stir occasionally until the sauce is heated through. Taste and adjust seasoning with salt and pepper as needed.
- Cook the gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions or, if frozen homemade gnocchi, cook until they float to the surface indicating they are done.
- Combine and serve: Drain the cooked gnocchi and immediately add them to the hot bolognese sauce. Toss gently to coat the gnocchi evenly. Serve in shallow bowls, garnished with grated parmesan cheese.
Notes
- Using frozen homemade gnocchi is delicious and convenient—just add directly to boiling water with a pinch of salt.
- The cream smooths out the acidity of the tomato paste and bolognese sauce, making the dish richer and silkier.
- Adjust the consistency of the sauce by adding more cream if desired.
- Grated parmesan cheese adds a nice salty finish but can be omitted for a lighter dish.
