Ingredients
Chicken and Coating
- 1¼ pounds chicken breasts
- 1 teaspoon salt, divided
- ½ teaspoon ground black pepper, divided
- ¾ cup flour, divided
- 1 cup grated parmesan cheese, divided
Sauce and Cooking
- 3 tablespoons butter
- 12 cloves garlic
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
Garnish and Sides (optional)
- Fresh parsley, finely chopped (optional, for garnish)
- Mashed potatoes (for serving)
- Green beans (for serving)
Instructions
- Season the Chicken: Dust the chicken breasts evenly with ½ teaspoon of salt and ¼ teaspoon of ground black pepper on both sides to enhance flavor before coating.
- Coat the Chicken: In a shallow bowl, combine ½ cup of flour with ½ cup of grated parmesan cheese. Press each chicken breast into this mixture until it is fully coated on all sides.
- Cook the Chicken: Melt the butter in a large skillet over medium-high heat along with the 12 cloves of garlic. Once hot, add the coated chicken breasts and sear them for 5 to 6 minutes on each side until they develop a golden-brown crust and reach an internal temperature of 165°F.
- Prepare the Sauce: Remove the chicken from the skillet and set aside. Into the same skillet, whisk in the remaining ¼ cup flour, chicken broth, heavy cream, and Dijon mustard until smooth. Stir in the remaining ½ cup parmesan cheese and the additional ½ teaspoon salt and ¼ teaspoon pepper, adjusting seasoning as needed.
- Simmer: Return the chicken breasts to the skillet, nestling them into the sauce. Simmer gently for 10 minutes to allow the flavors to meld and the chicken to fully cook through.
- Garnish and Serve: Garnish with freshly chopped parsley if desired and serve alongside mashed potatoes and green beans for a complete, comforting meal.
Notes
- Ensure the chicken reaches an internal temperature of 165°F to guarantee safe consumption.
- You can adjust the amount of garlic cloves to suit your personal preference for garlic intensity.
- For a lighter version, substitute heavy cream with half-and-half, though the sauce will be less rich.
- Use freshly grated parmesan cheese for the best flavor and texture.
- Remove garlic cloves before serving if you prefer a milder garlic flavor.
