Instructions
- Prepare the shrimp: Rinse the shrimp under cold water, then pat dry with paper towels. Ensure they are peeled and deveined for the best texture and flavor.
- Heat olive oil and butter: In a large skillet over medium heat, add the olive oil and 2 tablespoons of unsalted butter. Allow the butter to melt and blend with the oil to create the base for the sauce.
- Sauté garlic and spices: Add the minced garlic and crushed red pepper flakes to the skillet. Cook for about 1 minute, stirring frequently, until fragrant but not browned to avoid bitterness.
- Cook the shrimp: Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until pink and opaque, then flip to cook the other side for another 2 minutes. Shrimp cook quickly; avoid overcooking.
- Add wine and lemon: Pour in the dry white wine (or chicken broth as a substitute) and lemon juice along with the lemon zest. Stir to combine and let simmer for 2-3 minutes to reduce slightly and infuse the flavors.
- Finish the sauce: Stir in the remaining 2 tablespoons of butter to enrich the sauce and add a silky texture. Season with kosher salt to taste, and mix in the chopped parsley evenly.
- Serve immediately: Remove from heat and serve the shrimp scampi hot over pasta, rice, or with crusty bread to soak up the delicious garlic butter sauce.
