This Garlic Bread Grilled Cheese recipe elevates a classic comfort food by incorporating richly roasted garlic, fresh herbs, parmesan, and creamy fontina cheese. The garlic is slow-roasted until caramelized and then blended into a flavorful butter spread that perfectly complements the crisp sourdough bread grilled to golden perfection. A perfect twist for a cozy meal or an indulgent snack.

  • Total Time: 1 hour 20 minutes
  • Yield: 2 servings

Ingredients

Garlic Butter

  • 2 whole heads of garlic
  • Olive oil for drizzling
  • 6 tablespoons unsalted butter, softened
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh herbs (such as parsley, basil, rosemary)
  • Kosher salt, to taste

Sandwich

  • 4 slices sourdough bread
  • 6 ounces fontina cheese, freshly grated

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare for roasting the garlic.
  2. Prepare and roast garlic: Slice off the top portion of each garlic head to expose the cloves. Lightly rub and peel off excess paper wrapping. Drizzle each garlic bulb with olive oil and wrap tightly in foil. Place in the preheated oven and roast for 45 to 60 minutes until the cloves are soft, caramelized, and golden. Allow to cool slightly before handling.
  3. Make garlic butter: Once cool enough to touch, squeeze the roasted garlic cloves onto a plate. Add the softened unsalted butter, grated parmesan, chopped fresh herbs, and a pinch of kosher salt. Use a fork to mash and mix all ingredients into a smooth, flavorful spread.
  4. Assemble sandwiches: Spread the garlic butter generously on the outside surfaces of all four slices of sourdough bread. Heat a large skillet or griddle over medium-low heat. Place two slices of bread, butter side down, onto the skillet. Evenly distribute the freshly grated fontina cheese over these slices, then cover with the remaining two slices of bread, butter side up.
  5. Grill the sandwiches: Cook slowly over low to medium-low heat, allowing the cheese to melt gently while the bread becomes golden and toasted. Once the bottom side is golden and crispy, carefully flip the sandwiches and cook the other side until equally golden and the cheese is fully melted.
  6. Serve: Remove from skillet and optionally sprinkle with extra parmesan and fresh herbs. Slice the sandwiches and serve warm for a deliciously rich meal.

Notes

  • Roasting garlic slowly enhances its sweetness and reduces its pungency for a mellow flavor.
  • Use low to medium-low heat to avoid burning the bread while allowing cheese to melt perfectly.
  • Fresh herbs add brightness—feel free to experiment with your favorites.
  • If fontina is unavailable, mozzarella or a mild provolone can be good substitutes.
  • Use sourdough or another crusty bread for optimal texture and taste.
