Instructions
- Prepare the baking sheet: Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking and make removal easier once frozen.
- Mix the yogurt base: In a mixing bowl, whisk together the Greek yogurt, maple syrup (if using), and vanilla powder or extract until you have a smooth and uniform mixture. This creates a flavorful and slightly sweet base for the bark.
- Spread the yogurt: Pour the yogurt mixture onto the prepared baking sheet and spread it out evenly to about 1/4 inch thickness to ensure it freezes uniformly and breaks well once hardened.
- Add the toppings: Sprinkle the diced strawberries, blueberries, raspberries, and chopped nuts or granola evenly over the top of the yogurt layer, gently pressing them in slightly to help them adhere when frozen.
- Freeze: Place the baking sheet in the freezer and allow the yogurt bark to freeze completely for at least 2 hours. This ensures a firm, snackable texture.
- Break into pieces: Once fully frozen, use a knife or your hands to break the bark into smaller, bite-sized pieces suitable for serving or snacking.
- Serve or store: Enjoy immediately for the best texture or store in an airtight container in the freezer for up to one month. If too hard, let sit for a few minutes at room temperature to soften slightly before eating.
Notes
- Full-fat Greek yogurt is recommended for better texture as the fat prevents the bark from becoming too solid and icy.
- Fresh fruit is preferred over frozen since it can be chopped smaller and has better texture when frozen.
- You can store the yogurt bark in an airtight container in the freezer for up to a month; however, flavor and texture are best within two weeks.
- If the bark becomes too hard after freezing, let it rest at room temperature for a few minutes before consuming to soften.
