Ingredients

Salmon Burger

  • 500 g Salmon fillets (skinless and boneless)
  • 15 g Fresh herbs (dill, parsley, or chives)
  • Zest of 1 Lemon
  • 1 tsp Garlic powder
  • 1 Medium egg
  • 4 tbsp Plain flour
  • Salt and pepper to taste
  • 1-2 tsp Milk
  • 50 g Peas (defrosted)
  • Olive oil (for frying)

Tzatziki Dressing

  • 300 ml Natural yoghurt
  • 1/2 Cucumber (grated)
  • 1 clove Garlic (crushed)

To Serve

  • Lettuce leaves
  • Burger buns
  • Tomato slices (optional)

Instructions

  1. Prepare the salmon mixture: Cut the salmon fillets into bite-sized pieces and place them in a food processor.
  2. Combine ingredients in processor: Add fresh herbs, lemon zest, garlic powder, egg, plain flour, salt, and pepper to the salmon in the food processor. Pulse gently until the ingredients are just combined, ensuring not to over-process to maintain texture.
  3. Fold in peas and adjust batter: Transfer the mixture to a bowl and hand-stir in the defrosted peas. Add milk gradually, stirring until you achieve a thick batter consistency suitable for forming patties.
  4. Heat the frying pan: Pour olive oil into a frying pan and heat over medium heat until hot.
  5. Form and cook the patties: Scoop the mixture into four evenly sized patties and place them carefully in the hot pan.
  6. Cook the burgers: Fry the patties for about 8-10 minutes on each side, or until they turn golden brown and are cooked through.
  7. Make the tzatziki dressing: While the burgers cook, mix the natural yoghurt, grated cucumber, and crushed garlic together in a bowl until well combined.
  8. Serve: When the burgers are done, serve each patty in a burger bun lined with fresh lettuce and optionally tomato slices, topped with a generous helping of the tzatziki dressing.
