Caramelized Onions
- 2-3 medium onions, thinly sliced (about 1 lb)
- 2 tbsp olive oil (plus more for drizzling)
- 1 tbsp butter
- ½ tsp dried thyme leaves
- ¼ tsp grated nutmeg
- 1 tsp Dijon mustard
- 1 tsp Worcestershire Sauce (optional)
- ½ tsp sea salt
- Black pepper, to taste
- ¼ cup dry white wine (optional)
Toast and Assembly
- Baguette, sliced
- 1 cup grated Gruyere cheese
- Olive oil for drizzling
Instructions
- Caramelize the Onions: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the thinly sliced onions along with 1 tablespoon butter. Cook the onions for 5-7 minutes, stirring often until they become translucent. Season with ½ teaspoon salt, black pepper, nutmeg, thyme leaves, and Worcestershire Sauce if using. Reduce the heat to medium-low and continue cooking, stirring every 5-10 minutes, until the onions achieve a deep golden caramel color. This slow cooking process takes approximately 30-40 minutes.
- Deglaze the Pan: When the onions are well caramelized, pour in ¼ cup dry white wine to deglaze the pan, scraping up any browned bits to infuse extra flavor. Remove the onions from the heat and set them aside.
- Toast the Baguette Slices: Preheat the oven to 375°F (190°C). Arrange the sliced baguette on a baking sheet and drizzle lightly with olive oil. Toast the slices in the oven for 5-7 minutes until they turn golden at the edges and slightly crisp.
- Assemble and Melt Cheese: Remove the toasted bread from the oven and evenly spread the caramelized onions on each slice. Top generously with grated Gruyere cheese. Return the baking sheet to the oven for another 3-5 minutes or until the cheese is melted and bubbling.
- Serve: Once the cheese has melted, remove the toasts from the oven. Allow them to cool slightly before serving warm as an elegant appetizer or comforting snack.
Notes
- For deeper onion flavor, allow caramelization to proceed until onions are richly browned but not burnt.
- White wine is optional but adds brightness and depth to the caramelized onions.
- Gruyere cheese offers the perfect creamy, melty texture and nutty flavor; you can substitute with Swiss cheese if needed.
- Use day-old baguette for better texture that holds up to the toppings.
