Ingredients
Salad
- 1 pound carrots, peeled
- ¼ cup roughly chopped parsley or cilantro
- 2 green onions, thinly sliced on a diagonal
Dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- ½ teaspoon kosher salt
- ¼ teaspoon ground cumin
- ¼ teaspoon freshly ground black pepper
Instructions
- Prepare the Carrots: Peel the carrots thoroughly to remove the outer skin, then shred or grate them finely using a grater or food processor to achieve a tender texture for the salad.
- Slice the Green Onions: Thinly slice the green onions on a diagonal to add a mild onion flavor and a bit of crunch to the salad.
- Chop the Herbs: Roughly chop the parsley or cilantro to sprinkle fresh herbal notes throughout the salad.
- Make the Dressing: In a small bowl, whisk together extra virgin olive oil, lemon juice, honey, Dijon mustard, kosher salt, ground cumin, and freshly ground black pepper until well emulsified.
- Toss the Salad: In a large bowl, combine the shredded carrots, chopped herbs, and sliced green onions. Pour the dressing over the salad and toss well to evenly coat all ingredients with the flavorful dressing.
- Chill and Serve: Let the salad rest in the refrigerator for at least 15 minutes to allow the flavors to meld. Serve chilled or at room temperature as a refreshing side dish.
