Eggs
- 12 large Goldhen Cage Free Large Grade A Brown Eggs
Yolk Filling
- 1/2 cup mayonnaise
- 1 1/2 tablespoons Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried dill
- Kosher salt and pepper, to taste
Toppings
- 2 tablespoons Stonemill Everything Bagel Seasoning, plus more for sprinkling
- 4 slices Specially Selected Cold Smoked Salmon
Instructions
- Cook the eggs: Place the eggs in a large pot and cover with cold water. Bring the water to a rolling boil and let it bubble for 1 minute. Then, turn off the heat and cover the pot. Let the eggs sit undisturbed for 12 minutes to cook through.
- Cool and peel eggs: After 12 minutes, transfer the pot to the sink and fill it with cold water and ice cubes to cool the eggs rapidly. Let them cool for about 30 minutes, refreshing the water as needed. Once cooled, peel the eggs carefully and pat dry with paper towels.
- Prepare egg whites: Slice the eggs in half vertically or horizontally as desired. Gently remove the yolks and set aside. Dip the bottom of each egg white half into the everything bagel seasoning to coat the edges.
- Make the filling: Add the egg yolks, mayonnaise, Dijon mustard, garlic powder, dried dill, and a generous pinch of kosher salt and pepper to a food processor or blender. Process until the mixture is smooth, creamy, and mousse-like. Alternatively, mash with a fork until thoroughly combined. Taste and adjust seasoning as needed.
- Fill the eggs: Spoon or pipe the yolk mixture back into the seasoned egg white halves evenly and neatly.
- Top with smoked salmon: Slice the cold smoked salmon into small strips, twist or roll each piece, and place one on top of each filled deviled egg. Lightly sprinkle with additional everything bagel seasoning for extra flavor and crunch.
- Serve: Arrange on a platter and serve immediately or chill until ready to enjoy.
