Ingredients

4 ripe pears, halved and cored

120 grams blue cheese, crumbled

30 grams chopped walnuts, toasted

15 millilitres honey, plus extra for drizzling

15 millilitres balsamic vinegar

0.25 teaspoon ground black pepper

Fresh thyme sprigs, for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).

  2. Place pear halves on a baking tray lined with parchment paper, cut-side up.

  3. In a small bowl, mix crumbled blue cheese, toasted walnuts, and 15 millilitres of honey.

  4. Stuff the pear halves with the cheese mixture, pressing gently to secure the filling.

  5. Drizzle the balsamic vinegar over the stuffed pears.

  6. Roast for 15-20 minutes, until pears are tender and cheese is melted.

  7. Remove from the oven and season with black pepper.

  8. Drizzle with extra honey and garnish with fresh thyme before serving.
