Egg Tortilla Bake is a versatile and delicious breakfast or brunch option with a soft tortilla base, creamy cottage cheese, and a variety of fresh ingredients. You can make it with three different flavor variations, each packed with delicious ingredients.

Ingredients

Cooking spray or a little oil for greasing the baking dish

1 tortilla (8-10 inches in diameter)

3 large eggs

1/3 cup cottage cheese

Salt to taste

Black pepper to taste

Flavor Option One: Diced tomatoes, diced green peppers, chopped spinach or arugula, 1/4 cup mozzarella cheese (or choice of cheese)

Flavor Option Two: Diced tomatoes, Kalamata olives, red onions, spinach, feta cheese, mozzarella cheese

Flavor Option Three: 1/4 cup chopped shallots, 2 cups fresh spinach, 1/4 cup crumbled feta cheese, 1/4 cup mozzarella cheese, 1/2 teaspoon salt, 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray or a little oil.
  2. Place the tortilla in the greased baking dish, ensuring it covers the bottom evenly.
  3. In a medium bowl, whisk together the eggs, cottage cheese, salt, and pepper. Pour this mixture over the tortilla.
  4. Now, choose one of the flavor options:
    • For Flavor Option One: Top with diced tomatoes, green peppers, spinach or arugula, and mozzarella cheese.
    • For Flavor Option Two: Add diced tomatoes, Kalamata olives, red onions, spinach, and feta cheese along with mozzarella cheese.
    • For Flavor Option Three: Layer the shallots, spinach, crumbled feta, mozzarella, salt, and black pepper on top.
  5. Bake for 20-25 minutes, or until the eggs are set and the cheese is melted and golden.
  6. Allow the bake to cool for a few minutes before slicing and serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in the microwave or in the oven at 350°F (175°C) for 10-15 minutes until heated through.

For a gluten-free version, use a gluten-free tortilla.

Can be made ahead of time and refrigerated overnight.

Freeze individual slices for up to 2 months.

Add extra heat with diced jalapeños, red pepper flakes, or hot sauce.
