Ingredients
2 slices of bread (white, whole grain, sourdough)
1 large egg
½ cup grated cheese (cheddar, gruyere, or your favorite)
1 tsp finely chopped fresh herbs (thyme or rosemary)
Salt and black pepper to taste
Pinch of cayenne (optional)
Instructions
- Toast the bread slices in a toaster or on a skillet until golden brown and crispy.
- While the bread is toasting, heat a non-stick skillet over medium heat. Add butter or oil, crack the egg into the skillet, and cook it to your preferred doneness (sunny-side-up, over-easy, or well-done).
- Once the bread is toasted, sprinkle the grated cheese evenly over each slice. Place the slices back on the skillet to melt the cheese slightly while the egg finishes cooking.
- Place the cooked egg on top of one of the cheesy toast slices. Sprinkle fresh herbs, salt, pepper, and cayenne (if using) over the egg. Top with the second cheesy toast slice.
- Slice the toast and serve immediately.
Notes
For a creamy twist, mash avocado on the toast before adding cheese and egg.
Try hot sauce or sriracha for a spicy kick.
For a vegetarian version, add sautéed spinach, mushrooms, or tomatoes.
Experiment with different cheese blends, like mozzarella and parmesan, for varied flavors.
