Ingredients
1 (12 oz) package firm or extra firm silken tofu, drained
1 tablespoon fresh lemon juice
1 tablespoon apple cider vinegar
½ teaspoon salt
¼ teaspoon mustard powder
1–2 teaspoons pure maple syrup or agave syrup (optional)
Instructions
- Drain silken tofu and place it in a blender or food processor.
- Add lemon juice, apple cider vinegar, salt, mustard powder, and maple syrup (if using).
- Blend until smooth and creamy.
- Taste and adjust tanginess or sweetness as desired.
- Refrigerate for at least 30 minutes before serving to allow it to thicken and develop flavor.
Notes
Add garlic for an aioli-style mayo.
Mix in smoked paprika for a smoky version.
Use Dijon mustard instead of mustard powder for sharper flavor.
Stir before serving if separation occurs.
