A smooth, tangy, and oil-free vegan mayonnaise made with silken tofu. Quick to prepare, protein-packed, and perfect for sandwiches, salads, or dips.

Ingredients

1 (12 oz) package firm or extra firm silken tofu, drained

1 tablespoon fresh lemon juice

1 tablespoon apple cider vinegar

½ teaspoon salt

¼ teaspoon mustard powder

12 teaspoons pure maple syrup or agave syrup (optional)

Instructions

  1. Drain silken tofu and place it in a blender or food processor.
  2. Add lemon juice, apple cider vinegar, salt, mustard powder, and maple syrup (if using).
  3. Blend until smooth and creamy.
  4. Taste and adjust tanginess or sweetness as desired.
  5. Refrigerate for at least 30 minutes before serving to allow it to thicken and develop flavor.

Notes

Add garlic for an aioli-style mayo.

Mix in smoked paprika for a smoky version.

Use Dijon mustard instead of mustard powder for sharper flavor.

Stir before serving if separation occurs.
