Ingredients
Pickling Brine
- 150 ml white wine vinegar
- 100 ml water
- 1 tablespoon white sugar
Main Ingredient
- 1 red onion, very finely sliced
Instructions
- Prepare the Onion: Peel the red onion and slice it very thinly using a sharp knife or a mandoline for even slices. The thinner the slices, the quicker they absorb the pickling brine.
- Make the Pickling Brine: In a small saucepan, combine the white wine vinegar, water, and white sugar. Heat gently over medium heat just until the sugar dissolves completely. Do not boil.
- Combine and Pickle: Place the sliced onions in a clean jar or heatproof container. Pour the warm vinegar mixture over the onions, ensuring they are fully submerged. Let the jar cool to room temperature.
- Refrigerate and Marinate: Seal the jar with a lid and refrigerate for at least 30 minutes before serving. For best flavor, leave to marinate for 1-2 hours or overnight. The pickled onions will keep well for up to 2 weeks in the fridge.
Notes
- Use a mandoline to slice onions uniformly thin for best texture.
- Adjust sugar quantity to your preferred sweetness.
- Red wine vinegar or apple cider vinegar can be used as alternatives.
- For less tangy pickles, reduce vinegar slightly and increase water.
- Store pickled onions in a glass jar for best flavor retention.
