Ingredients
Nuts & Seeds
- 1 cup raw almonds
- 1 cup raw pecans
- 1 cup raw cashews
- ¾ cup raw shelled pistachios
- ⅔ cup raw pumpkin seeds
Spices & Flavorings
- 3 tablespoons pure maple syrup
- 1¼ teaspoon dried rosemary
- 1 teaspoon curry powder
- 1 teaspoon kosher salt
- ¾ teaspoon cayenne pepper
- Flaky sea salt (optional)
Instructions
- Preheat the Oven: Preheat your oven to 325°F (163°C) to prepare for roasting the nuts evenly.
- Mix Nuts and Seeds: In a large bowl, combine the raw almonds, pecans, cashews, pistachios, and pumpkin seeds thoroughly to ensure an even blend.
- Prepare the Spice Coating: In a small bowl, whisk together the pure maple syrup, dried rosemary, curry powder, kosher salt, and cayenne pepper until well combined to create a sticky spice mix.
- Coat the Nuts: Pour the maple syrup spice mixture over the nuts and seeds, stirring well to coat every piece evenly with the spiced glaze.
- Spread for Roasting: Line a baking sheet with parchment paper or a silicone baking mat and spread the coated nuts out in a single layer to ensure even roasting.
- Roast the Nuts: Place the baking sheet in the preheated oven and roast for 20-25 minutes, stirring once halfway through to prevent burning and promote even crispiness.
- Cool and Season: Remove the nuts from the oven and let them cool completely on the baking sheet; once cool, sprinkle with flaky sea salt if desired for added texture and flavor.
- Serve or Store: Enjoy immediately or store the spiced nuts in an airtight container at room temperature for up to two weeks for a delicious, on-the-go snack.
Notes
- Adjust cayenne pepper to your preferred spice level; reduce for milder nuts or increase for more heat.
- Using raw nuts allows the spices and maple syrup to fully penetrate and roast nicely. Avoid pre-roasted nuts.
- Make sure to stir the nuts halfway through roasting to avoid burning and to get an even roast.
- Store cooled spiced nuts in an airtight container to preserve crunchiness and flavor.
- These nuts are perfect for parties, as a snack, or sprinkled over salads for added texture and flavor.
