Ingredients
1 cup sourdough starter (unfed, discard)
1 tablespoon cold water
1 teaspoon granulated sugar
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
Butter and your favorite jam for serving
Instructions
- Prepare the batter: In a medium bowl, mix together the sourdough starter, cold water, sugar, salt, and baking soda. Stir well until everything is evenly combined. The mixture will bubble slightly due to the reaction between the baking soda and the sourdough.
- Heat the pan: Heat a non-stick frying pan or griddle over medium-low heat. If you have crumpet rings, grease them lightly with oil or butter and place them in the pan. Alternatively, you can make free-form crumpets by simply using the pan directly.
- Cook the crumpets: Spoon about 2 tablespoons of the batter into each crumpet ring or directly onto the pan if not using rings. Spread the batter gently to fill the rings. Cook for about 4-5 minutes, or until bubbles start forming on the surface of the crumpet and the edges begin to set.
- Flip and cook the other side: Once the top of the crumpet has set, carefully flip it over and cook for another 2-3 minutes on the other side, or until lightly golden.
- Serve: Remove the crumpets from the pan and let them cool slightly. Serve warm with butter and your favorite jam or spread.
Notes
For savory crumpets, you can add chopped herbs like rosemary or thyme, or grated cheese to the batter.
If you want a sweeter version, try adding cinnamon or honey to the batter.
If making a vegan version, substitute with plant-based butter for serving.
