Ingredients
Shrimp Scampi Sauce
- 2 tablespoons butter
- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, thinly sliced
- 3/4 cup white wine
- 1/4 cup packed chopped fresh flat-leaf parsley
- 2 tablespoons freshly-squeezed lemon juice (from about 1 lemon)
Shrimp
- 1 pound shrimp, peeled and de-veined
- 1 teaspoon fine sea salt
- 1/2 teaspoon cracked black pepper

Instructions
- Prepare the Butter and Garlic: Add the butter and olive oil to a large skillet over medium-high heat. Once the butter is melted, add the thinly sliced garlic and cook for 2-3 minutes, stirring constantly, until the garlic is fragrant, beginning to brown, and the butter begins to foam.
- Reduce the White Wine: Pour the white wine into the skillet, then reduce the heat to medium-low. Simmer for 7-10 minutes until the liquid reduces by half, concentrating the flavors.
- Season the Shrimp: While the wine is reducing, season the peeled and de-veined shrimp with fine sea salt and cracked black pepper, tossing to coat evenly.
- Sear the Shrimp: Increase the heat back to medium-high. In batches, add the seasoned shrimp to the skillet, ensuring they do not overlap. Sear for 2-3 minutes per side until the shrimp turn pink and curl up, indicating they are cooked. Remove shrimp from the skillet and set aside before cooking the next batch.
- Combine and Finish: Once all shrimp are cooked, turn off the heat. Return all shrimp to the skillet and add the fresh lemon juice and chopped parsley. Toss gently to combine all ingredients and coat the shrimp in the flavorful sauce.
- Serve: Serve the shrimp scampi over cooked noodles, or optionally alongside rice, orzo, or roasted potatoes. Garnish with lemon wedges if desired.
Notes
- Be careful not to overcook the shrimp, as they can become tough and rubbery. Cook just until they turn pink and curl.
- Use a dry white wine such as Sauvignon Blanc or Pinot Grigio for best results in the sauce.
- You can substitute shrimp with scallops or chicken if preferred, adjusting cooking time accordingly.
- For a richer flavor, add a pinch of red pepper flakes with the garlic for slight heat.
- Leftover shrimp scampi can be refrigerated for up to 2 days but is best enjoyed fresh.
