Ingredients
1 cup graham cracker crumbs
1/2 cup unsweetened cocoa powder
1/2 cup powdered sugar
1/2 cup creamy peanut butter
1/2 cup softened cream cheese
1 teaspoon vanilla extract
1/4 cup mini chocolate chips
Whipped cream (optional, for topping)
Instructions
- In a large bowl, mix graham cracker crumbs, cocoa powder, and powdered sugar until evenly combined.
- In a separate bowl, beat together cream cheese, peanut butter, and vanilla extract until smooth and creamy.
- Add the dry mixture to the wet mixture and stir until a dough-like consistency forms. If too dry, add 1 tablespoon of milk or more peanut butter.
- Fold in mini chocolate chips.
- Roll mixture into 1-inch bite-sized balls and place on a parchment-lined tray.
- Refrigerate for at least 30 minutes to firm up.
- Top with a dollop of whipped cream before serving, if desired.
Notes
Roll in cocoa powder, crushed graham crackers, or shredded coconut for extra texture.
Use almond, sunflower, or cookie butter for a nut-free alternative.
For a richer flavor, use dark cocoa and a touch of espresso extract.
Freeze up to 2 months for easy make-ahead treats.
