Instructions
- Prepare Oreo Mixture: Place the whole Oreo cookies (filling and all) into a food processor and pulse until finely crushed but not powdery, creating a coarse cookie crumb texture.
- Combine with Cream Cheese: Transfer the crushed Oreos to a mixing bowl and add the softened cream cheese. Stir or mix with a spatula until the mixture comes together into a thick, uniform dough.
- Form Bites: Using your hands or a small cookie scoop, shape the mixture into small bite-sized balls, roughly about 1 inch in diameter. Place them on a parchment-lined baking sheet.
- Chill Bites: Refrigerate the formed bites for about 20-30 minutes to firm them up, making them easier to coat with chocolate.
- Melt Chocolate Coating: In a microwave-safe bowl, combine the semi-sweet chocolate chips with the vegetable or coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
- Coat Bites with Chocolate: Using a fork or dipping tool, dip each chilled Oreo cheesecake bite into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off.
- Set Coated Bites: Place the coated bites back onto the parchment-lined baking sheet. Optionally, decorate with sprinkles, additional Oreo crumbs, or drizzled melted chocolate while the coating is still wet.
- Final Chill: Refrigerate the coated bites for at least 30 minutes, or until the chocolate is hardened and set.
