Ingredients

Chicken

  • 4 boneless, skinless chicken breasts (1 ¼ pounds total)
  • 1¼ teaspoon lemon pepper seasoning
  • Salt, to taste
  • 3 tablespoons butter (divided)
  • Additional lemon slices (for garnish)

Sauce

  • 3 tablespoons lemon juice
  • 5 garlic cloves (minced or pressed)
  • ⅓ cup chicken broth
  • 1¼ teaspoon fresh rosemary (chopped)
  • 1¼ teaspoon fresh parsley (chopped)
  • ¼ teaspoon red pepper flakes (more or less to taste)
  • 2 teaspoons honey (or maple syrup)

Instructions

  1. Prep: Position a rack in the center of the oven and preheat the oven to 425ºF (220ºC).
  2. Sauce: In a 1-cup measuring cup, combine 2 tablespoons of butter, lemon juice, minced garlic, chicken broth, freshly chopped rosemary, parsley, red pepper flakes, and honey. Microwave in 30-second increments until the butter melts, carefully watching to prevent boiling over.
  3. Chicken seasoning: Season the chicken breasts on both sides with lemon pepper seasoning and a generous pinch of salt.
  4. Sear chicken: Heat the remaining tablespoon of butter in an ovenproof skillet over medium-high heat. When hot, add chicken breasts without overcrowding and sear for 2-3 minutes per side until browned. If necessary, sear in batches. Alternatively, transfer chicken to a 9×13 baking dish sprayed with cooking spray if skillet isn’t ovenproof.
  5. Bake: Pour the prepared sauce over the chicken breasts. Place the skillet or baking dish in the oven and bake for 13-17 minutes, or until the internal temperature reaches 165ºF (74ºC). Spoon sauce over the chicken breasts a few times during baking to keep them moist.
  6. Serve: Garnish with additional lemon slices and serve immediately.
