For the Grapefruit Mocktail:

  2. Add rosemary simple syrup (or agave) and stir.

  3. Fill the glass with ice and top with club soda or sparkling water to your desired fizziness.

  4. Stir gently to mix and chill the drink.

  5. Garnish with fresh rosemary sprigs, grapefruit slices, and lime wedges. Optionally, rim the glass with sugar or salt.

Notes

For sweetness, you can add more rosemary simple syrup or use honey/agave.

Substitute rosemary with herbs like basil or thyme for a different flavor profile.

Use grapefruit soda instead of fresh grapefruit juice for convenience.

For a smoky twist, rim the glass with smoked salt or paprika.
