2/3 cup water
2–3 sprigs fresh rosemary
For Each Grapefruit Mocktail:
4 oz. fresh grapefruit juice (1/2 cup)
1/2 oz. fresh lime juice (1 tablespoon)
1/2–3/4 oz. rosemary simple syrup or agave (1–1 1/2 tablespoons)
2–4 oz. club soda or sparkling water (1/4–1/2 cup)
Optional Garnish:
Fresh rosemary sprigs
Grapefruit slices
Lime wedges
Sugar or salt rim
Instructions
For Rosemary Simple Syrup:

In a small saucepan, combine sugar and water.

Bring to a simmer over medium heat, stirring until the sugar dissolves.

Add fresh rosemary sprigs and simmer for 5-7 minutes to infuse the flavor.

Remove from heat, cool, and strain out rosemary. Store syrup in the fridge for up to a week.
For the Grapefruit Mocktail:

In a glass, combine fresh grapefruit juice and lime juice.

Add rosemary simple syrup (or agave) and stir.

Fill the glass with ice and top with club soda or sparkling water to your desired fizziness.
