Instructions

  1. Prepare the Beef: Pat the beef chuck pieces dry with paper towels, then season them lightly with salt. Dredge the beef pieces evenly in the white flour, shaking off any excess flour to ensure a light coating.
  2. Sear the Beef: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the floured beef pieces in batches, avoiding overcrowding, and brown them on all sides to develop a rich flavor. Remove and set aside.
  3. Sauté Aromatics: In the same skillet, add the remaining 2 tablespoons of olive oil. Sauté the diced onion, celery, and minced garlic until the onion is translucent and aromatic, approximately 3-4 minutes.
