Ingredients
Chicken and Seasoning
- 2 pounds boneless skinless chicken breast, 1-inch diced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Aromatics
- 2 tablespoons unsalted butter
- 1 small onion, diced
- 2 tablespoons minced garlic
Sauce Ingredients
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup Italian seasoned sliced pepperoncinis
Instructions
- Prepare the Chicken: Pat the diced chicken breast dry and season evenly with salt and pepper. This helps to build flavor and ensures the meat cooks evenly.
- Sauté Aromatics: In a large skillet, melt the unsalted butter over medium heat. Add the diced onions and minced garlic, cooking until the onions are soft and fragrant, about 3-4 minutes. This builds the flavor base for the sauce.
- Cook the Chicken: Add the seasoned chicken pieces to the skillet. Cook on medium heat, stirring occasionally until the chicken is no longer pink in the center and lightly browned on the outside, about 6-8 minutes.
- Add Liquids and Cheese: Pour in the chicken broth and stir to deglaze the pan, scraping any browned bits from the bottom. Lower the heat to medium-low, then pour in the heavy cream and sprinkle the grated Parmesan cheese. Stir gently to combine the ingredients, allowing the cheese to melt into the creamy sauce.
- Incorporate Pepperoncinis and Simmer: Stir in the sliced Italian seasoned pepperoncinis. Let the sauce simmer gently for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Finish and Serve: Taste and adjust seasoning with salt and pepper if needed. Remove from heat and serve the creamy pepperoncini chicken immediately, perfect alongside rice, pasta, or vegetables.
Notes
- You can substitute heavy cream with half-and-half or coconut cream for a lighter or dairy-free version, respectively.
- Adjust the amount of pepperoncinis based on your preferred spice level.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For a thicker sauce, reduce the chicken broth or let the sauce simmer a bit longer.
- Serve over cooked pasta, mashed potatoes, or steamed vegetables for a complete meal.
