Ingredients
Steak & Seasoning
- 1.5 lbs Sirloin or ribeye steak (cut into 1-inch bite-sized tips)
- 2 tbsp Cajun seasoning blend
- Salt and pepper, to taste
- 1 tsp Additional Cajun seasoning
- 1 tsp Smoked paprika
For Cooking Steak
- 2 tbsp Olive oil
Pasta
- 1 lb Rigatoni pasta
- 1 cup Reserved pasta water
Sauce
- 3 tbsp Butter
- 4 cloves Garlic, minced
- 1 cup Heavy cream
- 4 oz Cream cheese, softened to room temperature
- 1/2 cup Parmesan cheese, freshly grated
- 1/2 cup Mozzarella cheese, shredded
Garnish
- 2 tbsp Fresh parsley, chopped
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook until al dente, about 10-12 minutes. Before draining, reserve 1 cup of pasta water and set aside. Drain the pasta and keep it ready for the sauce.
- Season the Steak: Pat the steak tips dry with paper towels to ensure a good sear. In a bowl, toss the steak tips with 2 tablespoons Cajun seasoning, salt, and pepper. Let them rest for a few minutes to absorb the flavors.
- Sear the Steak Tips: Heat olive oil in a large skillet over medium-high heat until shimmering. Add the steak tips in a single layer without overcrowding the pan. Sear for 2-3 minutes per side until browned and crusty. Remove the steak tips and set aside, leaving the browned bits in the skillet.
- Sauté Garlic: Lower the heat to medium and melt butter in the same skillet. Add minced garlic and cook for about 30 seconds until fragrant but not browned.
- Make the Cheese Sauce: Pour in heavy cream and add softened cream cheese. Whisk continuously until the cream cheese is fully melted and the sauce is smooth and creamy.
- Add Cheeses and Spice: Stir in shredded mozzarella and grated Parmesan cheese until melted into a gooey sauce. Sprinkle in smoked paprika and the additional 1 teaspoon of Cajun seasoning. Taste and adjust seasoning as needed.
- Combine Pasta and Steak: Add the cooked rigatoni to the skillet and gently toss to coat with the cheese sauce. Fold in the seared steak tips. Gradually add reserved pasta water a little at a time to reach the desired sauce consistency, ensuring every piece of pasta and steak is richly coated.
- Garnish and Serve: Sprinkle chopped fresh parsley over the dish for a fresh color contrast. Serve immediately while hot and bubbly for the best cheesy, spicy experience.

- Make sure to pat the steak dry before seasoning and searing to develop a flavorful crust.
- If cream cheese isn’t soft, microwave it for 10-15 seconds to help it melt smoothly into the sauce.
- Reserve pasta water is crucial to adjust the sauce’s consistency and help it cling to the rigatoni.
- Use freshly grated Parmesan for the best flavor intensity.
