Ingredients

1 cup very cold almond milk

For the Filling:

6 medium organic Gala apples, sliced (about 6 cups)

1/2 cup organic cane sugar

1/4 cup organic brown sugar

2 tablespoons cornstarch

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon sea salt

1/8 teaspoon ground allspice

1 teaspoon vanilla extract

1/2 lemon, freshly squeezed

1 cup full-fat coconut milk or cream (organic)

1/4 cup pure maple syrup

Other:

1 egg wash (1 egg + 1 tablespoon milk) or dairy-free alternative

Instructions

  1. Peel, core, and slice apples into thin wedges. Place in a large mixing bowl.
  2. In a small bowl, combine cane sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, allspice, and vanilla. Sprinkle over apples and toss gently.
  3. Add lemon juice, coconut milk, and maple syrup to apples. Stir to combine, then transfer mixture to a greased 9-inch baking dish.
  4. Preheat oven to 400°F (200°C).
  5. In a large bowl, whisk together flour, cane sugar, baking powder, parsley, thyme, oregano, basil, and garlic powder.
  6. Cut cold vegan butter into flour mixture until coarse crumbs form.
  7. Stir in dairy-free cheddar cheese.
  8. Combine almond milk and lemon juice in a separate bowl, then pour into dry mixture. Stir until dough just comes together.
  9. Drop spoonfuls of biscuit dough over apple filling.
  10. Brush biscuit tops with egg wash or dairy-free alternative.
  11. Bake 35–45 minutes, until biscuits are golden and filling is bubbling.
  12. Cool 10–15 minutes before serving.

Notes

For a fully dairy-free finish, omit egg wash or replace with almond milk mixed with maple syrup.
