For the Cheddar Herb Biscuits:
2 cups organic all-purpose flour
1/4 cup organic cane sugar
2 teaspoons baking powder

1 cup very cold almond milk

For the Filling:
6 medium organic Gala apples, sliced (about 6 cups)
1/2 cup organic cane sugar
1/4 cup organic brown sugar
2 tablespoons cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon sea salt
1/8 teaspoon ground allspice
1 teaspoon vanilla extract
1/2 lemon, freshly squeezed
1 cup full-fat coconut milk or cream (organic)
1/4 cup pure maple syrup
Other:
1 egg wash (1 egg + 1 tablespoon milk) or dairy-free alternative
Instructions
- Peel, core, and slice apples into thin wedges. Place in a large mixing bowl.
- In a small bowl, combine cane sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, allspice, and vanilla. Sprinkle over apples and toss gently.
- Add lemon juice, coconut milk, and maple syrup to apples. Stir to combine, then transfer mixture to a greased 9-inch baking dish.
- Preheat oven to 400°F (200°C).
- In a large bowl, whisk together flour, cane sugar, baking powder, parsley, thyme, oregano, basil, and garlic powder.
- Cut cold vegan butter into flour mixture until coarse crumbs form.
- Stir in dairy-free cheddar cheese.
- Combine almond milk and lemon juice in a separate bowl, then pour into dry mixture. Stir until dough just comes together.
- Drop spoonfuls of biscuit dough over apple filling.
- Brush biscuit tops with egg wash or dairy-free alternative.
- Bake 35–45 minutes, until biscuits are golden and filling is bubbling.
- Cool 10–15 minutes before serving.
Notes
For a fully dairy-free finish, omit egg wash or replace with almond milk mixed with maple syrup.
Gala apples give a naturally sweet flavor, but Granny Smith or Honeycrisp add tartness.
Herbs in biscuits create a savory contrast—swap for cinnamon for a sweeter variation.
For added crunch, sprinkle chopped nuts over biscuit dough before baking.
