4 flour tortillas
1/2 cup shredded lettuce
3/4 cup cherry tomatoes, halved
1/3 cup ranch dressing
1 small red onion, sliced
4 tablespoons corn (well drained if canned or thawed)
1 cup shredded cheddar cheese
Instructions
- Prepare the Taco Beef: In a skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess fat.
- Stir in chili powder, smoked paprika, garlic powder, dried oregano, ground cumin, and onion powder. Add salt and pepper to taste. Cook for an additional 2-3 minutes, ensuring the beef is well-coated with the seasoning. Remove from heat and set aside.
- Prepare the Wraps: Warm the flour tortillas in a dry skillet or microwave for a few seconds until they are soft and pliable.
- Lay each tortilla flat and spoon the seasoned beef in the center of the tortilla.
- Top with shredded lettuce, cherry tomatoes, red onion slices, corn, and shredded cheddar cheese.
- Drizzle with ranch dressing and fold the tortilla to form a wrap, folding in the sides and rolling it up tightly.
- If desired, heat the folded wrap in a skillet over medium heat for 1-2 minutes per side until the tortilla is crispy and the cheese is melted.
- Serve immediately and enjoy!
Notes
For a vegetarian version, replace the beef with black beans, refried beans, or grilled vegetables.
Add diced jalapeños or a few dashes of hot sauce for extra heat.
Feel free to swap out the cheddar for Monterey Jack, pepper jack, or a Mexican cheese blend.
For a gluten-free option, use gluten-free tortillas.
