The Crunchy Beef Tortilla Folded Wrap is a delicious and satisfying handheld meal featuring seasoned taco beef, fresh vegetables, and creamy ranch dressing wrapped in a crispy tortilla. It’s the perfect balance of textures and flavors for a quick weeknight dinner or lunch.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

1 pound ground beef

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon onion powder

2 tablespoons olive oil

Salt and black pepper, to taste

4 flour tortillas

1/2 cup shredded lettuce

3/4 cup cherry tomatoes, halved

1/3 cup ranch dressing

1 small red onion, sliced

4 tablespoons corn (well drained if canned or thawed)

1 cup shredded cheddar cheese

Instructions

  1. Prepare the Taco Beef: In a skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned and cooked through, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Stir in chili powder, smoked paprika, garlic powder, dried oregano, ground cumin, and onion powder. Add salt and pepper to taste. Cook for an additional 2-3 minutes, ensuring the beef is well-coated with the seasoning. Remove from heat and set aside.
  3. Prepare the Wraps: Warm the flour tortillas in a dry skillet or microwave for a few seconds until they are soft and pliable.
  4. Lay each tortilla flat and spoon the seasoned beef in the center of the tortilla.
  5. Top with shredded lettuce, cherry tomatoes, red onion slices, corn, and shredded cheddar cheese.
  6. Drizzle with ranch dressing and fold the tortilla to form a wrap, folding in the sides and rolling it up tightly.
  7. If desired, heat the folded wrap in a skillet over medium heat for 1-2 minutes per side until the tortilla is crispy and the cheese is melted.
  8. Serve immediately and enjoy!

Notes

For a vegetarian version, replace the beef with black beans, refried beans, or grilled vegetables.

Add diced jalapeños or a few dashes of hot sauce for extra heat.

Feel free to swap out the cheddar for Monterey Jack, pepper jack, or a Mexican cheese blend.

For a gluten-free option, use gluten-free tortillas.

If you prefer a lighter version, substitute the beef with ground turkey, chicken, or a plant-based protein.
