  • Yield: 4-6 servings

Ingredients

1 lb kielbasa or smoked sausage, sliced into 1-inch pieces

1 lb fresh green beans, trimmed (or 2 cans green beans, drained)

1 lb baby potatoes, halved

1 medium onion, chopped

3 cloves garlic, minced

1 cup chicken broth (low-sodium)

2 tbsp butter, cut into pieces

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika (optional)

1/2 tsp salt (or to taste)

1/2 tsp black pepper

For Garnish (Optional):

1 tbsp fresh parsley, chopped

1 tbsp grated Parmesan cheese

Instructions

  • Prepare the Ingredients: Slice the kielbasa, trim the green beans, halve the baby potatoes, and chop the onion. Mince the garlic.

  • Assemble in the Crockpot: Place the kielbasa, green beans, baby potatoes, onion, and garlic into the crockpot. Pour in chicken broth.

  • Add Seasonings: Sprinkle in garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Stir to combine.

  • Top with Butter: Place butter pieces on top of the ingredients.

  • Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender.

  • Garnish and Serve: Stir the dish before serving. Optionally, garnish with fresh parsley and grated Parmesan cheese.

Notes

Add other vegetables like carrots, bell peppers, or corn for extra flavor and color.

Substitute kielbasa with any smoked sausage or turkey kielbasa.

For a spicy kick, add red pepper flakes or jalapeño.

To make it dairy-free, skip the butter and Parmesan garnish.
