- 500 ml vegan cream or full fat coconut milk
- Salt and black pepper, to taste
- Fresh thyme or mixed fresh herbs

Instructions
- Preheat the Oven: Preheat your oven to 180°C (350°F) to prepare for baking the scalloped potatoes.
- Sauté Onions and Garlic: In a pan, melt the vegan butter over medium heat. Add the sliced onions and garlic, cooking gently until they soften and become translucent, releasing their aroma.
- Make the Sauce: Sprinkle the flour over the softened onions and garlic, stirring well to form a roux. Gradually pour in the vegan cream or coconut milk while stirring constantly to avoid lumps. Cook the sauce until it thickens to a creamy consistency. Season with salt, black pepper, and fresh thyme or mixed herbs.
- Assemble the Dish: In a greased baking dish, layer half of the sliced potatoes evenly. Pour half of the cream sauce over the potatoes. Repeat with the remaining potatoes and sauce, ensuring the top layer is covered.
- Add Cheese Topping: Sprinkle the shredded vegan cheese evenly over the top layer of cream-covered potatoes for a golden, melted crust.
- Bake: Cover the dish with foil and bake in the preheated oven for about 45 minutes. Remove the foil and continue baking for another 20-30 minutes until the potatoes are tender when pierced and the top is golden and bubbling.
- Rest and Serve: Allow the scalloped potatoes to rest for 10 minutes before serving to let the sauce thicken slightly and the flavors meld together.
