This creamy scalloped potatoes recipe offers a rich, comforting dish made with thinly sliced potatoes, onions, garlic, and a luscious vegan cream sauce. Topped with melted vegan cheese and fresh herbs, it’s a deliciously dairy-free twist on a classic side dish, perfect for family dinners or special occasions.

  • Total Time: 1 hour 35 minutes
  • Yield: 6 servings

Ingredients

Potatoes & Vegetables

  • 1.2 to 1.5 kg potatoes, peeled and thinly sliced
  • 2 large onions, thinly sliced
  • 3 to 4 cloves garlic, sliced

Sauce

  • 3 tbsp vegan butter
  • 2 to 3 tbsp flour
  • 500 ml vegan cream or full fat coconut milk
  • Salt and black pepper, to taste
  • Fresh thyme or mixed fresh herbs

Topping

  • Cheese or vegan cheese, shredded for topping

Instructions

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) to prepare for baking the scalloped potatoes.
  2. Sauté Onions and Garlic: In a pan, melt the vegan butter over medium heat. Add the sliced onions and garlic, cooking gently until they soften and become translucent, releasing their aroma.
  3. Make the Sauce: Sprinkle the flour over the softened onions and garlic, stirring well to form a roux. Gradually pour in the vegan cream or coconut milk while stirring constantly to avoid lumps. Cook the sauce until it thickens to a creamy consistency. Season with salt, black pepper, and fresh thyme or mixed herbs.
  4. Assemble the Dish: In a greased baking dish, layer half of the sliced potatoes evenly. Pour half of the cream sauce over the potatoes. Repeat with the remaining potatoes and sauce, ensuring the top layer is covered.
  5. Add Cheese Topping: Sprinkle the shredded vegan cheese evenly over the top layer of cream-covered potatoes for a golden, melted crust.
  6. Bake: Cover the dish with foil and bake in the preheated oven for about 45 minutes. Remove the foil and continue baking for another 20-30 minutes until the potatoes are tender when pierced and the top is golden and bubbling.
  7. Rest and Serve: Allow the scalloped potatoes to rest for 10 minutes before serving to let the sauce thicken slightly and the flavors meld together.

Notes

  • Use a mandoline for even potato slices to ensure uniform cooking.
  • For a gluten-free version, substitute flour with a gluten-free flour blend or cornstarch.
  • Adjust seasoning according to preference, adding nutmeg for additional warmth.
  • Letting the dish rest after baking helps it set and improves serving consistency.
  • Vegan cream can be substituted with full-fat coconut milk for a richer coconut flavor.
