Chicken
- 2 lbs. organic chicken breasts (can substitute thighs or drumsticks)

Sauce
- 4 Tbsps unsalted butter
- 1 tablespoon extra virgin olive oil
- 4 garlic cloves, minced
- 1 ½ Tbsps Tuscan Marry Me seasoning blend (store-bought or homemade; see Notes)
- 1 teaspoon sea salt
- 1 ½ cups organic heavy cream
- 1 cup organic chicken stock or broth
- 3 Tbsps white cooking wine (or substitute with additional chicken stock)
- ½ lemon, freshly squeezed
- 1 cup freshly grated parmesan cheese
- 1 tablespoon organic tomato paste
- 1-2 cups grape or cherry tomatoes, halved or whole (optional substitution: 5-6 sun-dried tomatoes or roasted herb tomatoes)
- 1 cup organic kale, chopped
Instructions
- Prepare the Chicken: Pat chicken breasts dry with paper towels. Rub the chicken with sea salt and the On Everything All-Purpose Blend evenly on all sides for authentic flavor. Set aside while you prepare the sauce ingredients.
- Sear the Chicken: In a large skillet over medium-high heat, heat 2 tablespoons of extra virgin olive oil. Add the chicken breasts and sear them until golden brown on both sides, about 4-5 minutes per side. Remove chicken from skillet and set aside.
- Make the Sauce Base: In the same skillet, reduce heat to medium and add 4 tablespoons unsalted butter and 1 tablespoon extra virgin olive oil. Once butter melts, add minced garlic and sauté for about 1 minute until fragrant but not browned.
- Add Seasoning and Liquids: Stir in 1 ½ tablespoons Tuscan Marry Me seasoning blend and 1 teaspoon sea salt. Pour in 1 ½ cups organic heavy cream, 1 cup chicken stock, and 3 tablespoons white cooking wine. Stir well to combine and bring the mixture to a gentle simmer.
- Incorporate Tomato and Cheese: Add 1 tablespoon organic tomato paste, 1 cup freshly grated parmesan cheese, and juice of half a lemon. Stir continuously until the cheese melts and the sauce starts to thicken, about 3-5 minutes.
- Add Vegetables and Return Chicken: Stir in 1-2 cups grape or cherry tomatoes and 1 cup chopped kale. Nestle the seared chicken breasts back into the skillet, spooning some sauce over them.
- Simmer Until Cooked Through: Cover the skillet and reduce the heat to low. Let the chicken simmer in the creamy sauce until cooked through and juices run clear, about 10-12 minutes, and the sauce thickens to a creamy consistency.
- Final Adjustment and Serve: Taste the sauce and adjust seasoning with more salt or seasoning blend if desired. Serve the creamy Tuscan chicken over pasta, rice, or with crusty bread to soak up the delicious sauce.
Notes
- The “On Everything All-Purpose Blend” is a savory seasoning mix typically consisting of garlic powder, dried herbs, salt, and pepper. You can make your own by combining equal parts garlic powder, onion powder, dried oregano, dried basil, sea salt, and black pepper.
- The “Tuscan Marry Me Blend” usually includes dried herbs like rosemary, thyme, parsley, garlic powder, and crushed red pepper. Creating your own blend enhances the authentic taste.
- If white cooking wine is not available, substituting with additional chicken stock is a great alternative.
