  • ¼ teaspoon salt
  • ¼ teaspoon red pepper flakes

  • 8 oz mushrooms, thinly sliced

  • 2 tablespoons olive oil
  • 1 cup half and half
  • ½ cup Parmesan cheese, shredded
  • ½ cup Mozzarella cheese, shredded

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of the cooked pasta water, then drain the pasta and set aside.
  2. Sauté the shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp seasoned with salt, dried basil, paprika, and red pepper flakes. Cook for 2-3 minutes per side until shrimp turn pink and opaque. Remove shrimp from skillet and set aside.
  3. Cook the mushrooms and garlic: In the same skillet, add the thinly sliced mushrooms and minced garlic. Sauté until mushrooms release their moisture and become tender, about 5-6 minutes.
  4. Prepare the creamy sauce: Reduce heat to low and pour in half and half. Stir well to combine with mushroom mixture. Gradually add the shredded Parmesan and Mozzarella cheeses, stirring continuously until the sauce is smooth and creamy. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.
  5. Combine pasta and shrimp: Return the cooked shrimp to the skillet and toss to coat them in the creamy sauce. Add the drained fettuccine and gently toss to combine all ingredients evenly, ensuring the pasta is well coated with sauce.
