Ingredients

Pasta and Vegetables

  • 8 ounces uncooked pasta
  • 1 bunch asparagus (ends trimmed, cut into smaller pieces)

Salmon

  • 1 pound fresh salmon
  • Salt & pepper (to taste)
  • 1/4 teaspoon Italian seasoning

Sauce

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1 tablespoon lemon juice + zest from 1/2 lemon
  • 1/2 cup freshly grated parmesan cheese
  • 3/4 cup heavy/whipping cream

Instructions

  1. Cook Pasta: Boil a large pot of salted water, then add the pasta and cook it al dente according to package directions. Once done, drain and set aside.
  2. Prep Asparagus and Salmon: While the pasta cooks, trim about 1.5 inches from the ends of the asparagus and cut into smaller pieces. Season the salmon with salt, pepper, and Italian seasoning on both sides.
  3. Cook Salmon: Heat butter and olive oil together in a skillet over medium-high heat. Add the salmon and cook for about 3 minutes on each side until nicely seared. Remove the salmon from the pan and set aside.
  4. Sauté Asparagus: In the same skillet, add the asparagus and cook for 2 to 3 minutes, depending on thickness or desired tenderness.
  5. Add Garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, taking care not to burn it.
  6. Make Sauce and Combine: Add lemon juice, lemon zest, heavy cream, and parmesan cheese to the skillet. Stir well and return the salmon to the pan, breaking it into smaller pieces with your spoon. Let the sauce cook for a few minutes until the salmon is fully cooked, asparagus is tender, and the sauce slightly reduces but remains creamy.
  7. Toss and Serve: Add the drained pasta directly into the skillet with the sauce and gently toss to combine. Serve immediately while warm for the best flavor and texture.

Notes

  • For extra zest, garnish with additional lemon zest or freshly chopped herbs like parsley or dill.
  • You can substitute heavy cream with half-and-half for a lighter sauce, but it may be less creamy.
  • Use any pasta shape you prefer, but fettuccine or penne works especially well in this dish.
  • If fresh salmon is not available, wild-caught frozen salmon can be used—just thaw fully before cooking.
