- 1/2 yellow onion, chopped
- 1 small red bell pepper, chopped
- 2 garlic cloves, minced
- 1 cup pumpkin purée
- 1/2 cup unsweetened coconut cream
- 1 tbsp white miso paste
- 1 tsp maple syrup
- 2 tsp balsamic vinegar
- 2 tbsp sage, chopped (and fried for serving)
Instructions
- Prepare the vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped yellow onion and red bell pepper, sautéing until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Cook the gnocchi: In the same skillet or a separate pot, cook the gnocchi according to package instructions, typically boiling until they float to the surface. Drain and set aside.
- Make the pumpkin sauce: In the skillet with the sautéed vegetables, add pumpkin purée, coconut cream, white miso paste, maple syrup, and balsamic vinegar. Stir well to combine and simmer gently over low heat for 3-5 minutes until the sauce thickens slightly.
- Toss gnocchi with sauce: Add the cooked gnocchi back into the skillet with the pumpkin sauce. Gently toss to coat all gnocchi evenly, cooking for an additional 2 minutes to let flavors meld.
- Prepare sage garnish: In a small pan, heat a little oil and fry the chopped sage leaves until crispy, about 1-2 minutes. Drain on paper towels.
- Serve: Plate the creamy pumpkin gnocchi and sprinkle crispy fried sage on top for a flavorful and aromatic finishing touch.

- You can use either store-bought or homemade gnocchi according to your preference.
- Unsweetened coconut cream provides richness but can be substituted with heavy cream or a plant-based cream alternative.
