Garlic Parmesan Chicken

  • 1/4 cup white wine
  • 1/2 cup Parmesan cheese, grated, plus extra to serve
  • 5 oz sour cream
  • 2 tbsp parsley, finely diced
  • Salt and pepper, to taste

Instructions

  1. Prepare Garlic Confit: In a small saucepan, combine 1 cup olive oil and 12 garlic cloves. Gently simmer on low heat until the garlic is soft and fragrant but not browned, about 30 minutes. Remove from heat and set aside.
  2. Season the Chicken: Pat dry the chicken breasts and season both sides with dried oregano, salt, and pepper. This will add layers of flavor before cooking.
  3. Sear the Chicken: Heat 2 tablespoons olive oil in a skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side. Remove chicken from the pan and set aside.
  4. Create the Sauce Base: Reduce heat to medium and add 4 tablespoons salted butter to the skillet. Once melted, add 12 garlic confit cloves or 4 minced raw garlic cloves and sauté for 1-2 minutes until fragrant.
  5. Deglaze the Pan: Pour in 1/4 cup white wine to deglaze, scraping the bottom of the skillet to loosen any browned bits. Let the wine reduce by half, approximately 3 minutes.
  6. Add Cheese and Cream: Stir in 1/2 cup grated Parmesan cheese and 5 ounces sour cream until the sauce is smooth and creamy.
  7. Finish the Chicken: Return the seared chicken breasts to the skillet, spoon the sauce over them, and cook on low heat for an additional 5-7 minutes, or until the chicken is cooked through and the sauce is heated.
