Ingredients
Main Ingredients
- 1 cup cherries, fresh or frozen, pips removed
- 2 teaspoons lemon juice
- 1 cup almond milk or milk of choice
- ½ cup Greek style yogurt
- 1–2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 tablespoon chia seeds
- Pinch of salt
Topping
- ½ cup Greek style yogurt
- Fresh cherries, for garnish
Instructions
- Prepare the Cherry Mixture: In a bowl, combine the cherries with lemon juice to enhance their flavor and help maintain their color.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the almond milk, Greek yogurt, maple syrup, and vanilla extract until well blended.
- Add Dry Ingredients: Stir in the rolled oats, chia seeds, and a pinch of salt into the wet mixture, mixing thoroughly to ensure everything is evenly incorporated.
- Add Cherries: Fold the cherry and lemon juice mixture into the oat blend gently to distribute the fruit throughout.
- Refrigerate Overnight: Cover the bowl or transfer the mixture into individual jars or containers. Refrigerate for at least 6 hours or overnight to allow oats and chia seeds to absorb the liquid and flavors to meld.
- Serve: In the morning, stir the overnight oats gently and serve topped with ½ cup of Greek yogurt and fresh cherries for a refreshing finish.
