Instructions
- Prepare the Batter: In a large mixing bowl, combine the creamed corn, milk or buttermilk, and egg. Whisk together until smooth and blended.
- Add Corn and Feta: Stir in the corn kernels and crumbled feta cheese, mixing gently to distribute evenly without breaking up the feta too much.
- Season and Incorporate Flour: Sprinkle in the salt and black pepper. Gradually add the self-raising flour to the mixture, folding in carefully until just combined to form a thick batter. Avoid over-mixing to ensure light fritters.
- Heat the Pan: Place a skillet or frying pan over medium heat and add butter or your preferred oil for frying. Allow it to heat fully but prevent it from smoking.
- Cook the Fritters: Using a spoon, drop dollops of batter onto the hot pan, flattening slightly for even cooking. Fry each fritter for about 3-4 minutes on each side or until golden brown and cooked through. Adjust the heat as needed to prevent burning.
- Drain Excess Oil: Remove the cooked fritters from the pan and place them on a plate lined with paper towels to absorb excess oil.
- Serve: Garnish with finely sliced spring onions if desired, and serve warm with optional sour cream and chutney or sauce on the side for dipping.
