These Cream Cheese Spinach Puffs are a savory, low-carb appetizer or snack made with creamy cream cheese, fresh spinach, and a cheesy filling wrapped in a tender, almond flour dough. Perfect for keto or low-carb diets, these puffs are easy to make and packed with flavor, making them a great choice for any occasion. They’re crispy, cheesy, and irresistibly delicious!

  • Total Time: 30-35 minutes
  • Yield: 8-10 puffs

Ingredients

Low-Carb Almond Flour Dough or Fathead Dough:

Filling:

1 cup fresh spinach

4 oz. cream cheese

1/4 cup grated Parmesan cheese

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper to taste

1 egg (for egg wash)

Instructions

  • Prepare the Dough: If you’re using almond flour dough, follow your preferred recipe or prepare the Fathead dough. Typically, this involves melting mozzarella cheese with cream cheese, then combining it with almond flour, egg, and seasonings. Set aside to cool slightly.

  • Cook the Spinach: In a skillet, cook the fresh spinach over medium heat until wilted. Remove from heat and let cool. Squeeze out excess moisture from the spinach.

  • Make the Filling: In a bowl, combine the cream cheese, Parmesan, garlic powder, onion powder, and cooked spinach. Season with salt and pepper to taste.

  • Assemble the Puffs: Preheat the oven to 375°F (190°C). Roll out the dough into small circles or squares. Place a spoonful of the spinach and cream cheese mixture in the center of each dough portion.

  • Seal and Egg Wash: Fold the dough over the filling, forming a pocket or puff shape. Use a fork to crimp the edges. Brush the tops with a beaten egg for a golden finish when baked.

  • Bake: Place the puffs on a parchment-lined baking sheet and bake for 15-20 minutes, or until golden brown.

  • Serve: Let the puffs cool slightly before serving. Enjoy as a snack, appetizer, or side dish!

Notes

Cheese Variety: Experiment with different cheeses such as ricotta, mozzarella, or feta for a different flavor in the filling.

Spicy Kick: Add red pepper flakes or finely diced jalapeños to the filling for a spicy version.

Frozen Spinach: You can use frozen spinach; just be sure to thaw and drain it well before using.
