Caesar Dressing
- 2 large egg yolks
- 2 anchovy filets, roughly chopped

- ½ cup avocado oil (or other neutral oil)

Instructions
- Prepare the breadcrumbs: Heat the extra-virgin olive oil in a skillet over medium heat. Add the panko breadcrumbs and sauté, stirring frequently, until they are golden brown and crisp. Remove from heat and set aside to cool.
- Make the dressing base: In a medium bowl, whisk together the egg yolks, chopped anchovy filets, garlic, lemon juice, and kosher salt until the mixture is smooth and slightly thickened.
- Emulsify the dressing: While whisking continuously, slowly drizzle in the avocado oil to create a creamy, emulsified dressing. Once combined, stir in the Worcestershire sauce and freshly cracked black pepper. Taste and adjust lemon juice or salt as needed.
- Toss the salad: In a large bowl, combine the chopped romaine lettuce and cooled toasted panko breadcrumbs. Drizzle the dressing over the salad and toss gently to coat all leaves evenly.
- Add cheese and finish: Sprinkle the grated Parmesan cheese over the coated salad. Toss lightly again. Season with additional freshly cracked black pepper if desired. Serve immediately to maintain crispness.
