Instructions

  1. Prepare the breadcrumbs: Heat the extra-virgin olive oil in a skillet over medium heat. Add the panko breadcrumbs and sauté, stirring frequently, until they are golden brown and crisp. Remove from heat and set aside to cool.
  2. Make the dressing base: In a medium bowl, whisk together the egg yolks, chopped anchovy filets, garlic, lemon juice, and kosher salt until the mixture is smooth and slightly thickened.
  3. Emulsify the dressing: While whisking continuously, slowly drizzle in the avocado oil to create a creamy, emulsified dressing. Once combined, stir in the Worcestershire sauce and freshly cracked black pepper. Taste and adjust lemon juice or salt as needed.
  4. Toss the salad: In a large bowl, combine the chopped romaine lettuce and cooled toasted panko breadcrumbs. Drizzle the dressing over the salad and toss gently to coat all leaves evenly.
