A Greek-inspired one-tray dinner featuring juicy beef patties (biftekia) baked with lemon-oregano potato wedges for a hearty, flavorful, and easy family meal.

Ingredients

  • 1 lb (450 g) ground beef
  • 3 garlic cloves, divided
  • 1 medium red onion, coarsely grated
  • 1 medium tomato, coarsely grated (skin discarded)
  • 2 tsp dried oregano, divided
  • 1 tsp dried mint
  • 1/2 cup dried breadcrumbs (use gluten-free if needed)
  • 1/4 cup whole milk (or plant-based milk)
  • 1/4 cup flat-leaf parsley, divided
  • 1 large egg
  • Sea salt and freshly ground black pepper, to taste
  • 3 tbsp extra-virgin olive oil, divided
  • 2 lb (900 g) baking or waxy potatoes, cut into 1-inch wedges
  • 1 lemon (zest and juice)

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, combine ground beef, 1 grated garlic clove, grated onion, grated tomato, 2 tsp oregano, dried mint, breadcrumbs, milk, half of the chopped parsley, egg, salt, pepper, and 1 tbsp olive oil. Mix thoroughly until well combined.
  2. Cut potatoes into wedges. In a large roasting tray, grate in remaining garlic, add lemon zest, remaining oregano, salt, pepper, lemon juice, and 2 tbsp olive oil. Toss well, adding a splash of water to the base.
  3. Shape the beef mixture into four 1/2-inch thick patties and place them among the potatoes in the tray. Cover tightly with foil and bake for 10–12 minutes until patties begin browning.
  4. Remove foil and continue baking for 30–35 minutes, until potatoes are golden and biftekia are crusted and cooked through.
  5. Sprinkle remaining parsley over the top before serving.

Notes

  • Add chili flakes to the meat mixture for a spicy variation.
  • Top patties with cheese in the last few minutes for a melty finish.
  • Serve with a fresh Greek salad or tzatziki for a complete meal.
  • For gluten-free, substitute breadcrumbs with gluten-free ones or omit.
  • Storage: Refrigerate up to 3 days; reheat in oven for best texture.
