Soft white bread rolled with cinnamon-sugar filling, dipped in a vanilla-spiced egg batter, and cooked to golden perfection—these sweet roll-ups are perfect for busy mornings or special brunches, loved by kids and adults alike.

Ingredients

For the Roll-Ups:

10 slices white sandwich bread

3 tablespoons butter, melted

3 tablespoons brown sugar

2 tablespoons ground cinnamon

For the French Toast Coating:

3 large eggs

1 tablespoon milk

½ teaspoon ground cinnamon

½ teaspoon vanilla extract

Instructions

  1. Flatten each bread slice with a rolling pin until thin and flexible.

  2. Mix brown sugar and ground cinnamon in a small bowl.

  3. Brush each flattened bread slice with melted butter, then sprinkle with cinnamon-sugar mixture evenly.

  4. Roll each slice tightly and set aside.

  5. Whisk eggs, milk, cinnamon, and vanilla extract in a shallow dish.

  6. Dip each roll-up in the egg mixture, coating all sides well.

  7. Heat a non-stick skillet or griddle over medium heat and add butter or oil.

  8. Cook roll-ups seam side down for 2-3 minutes, turning occasionally until golden brown and cooked through.

  9. Remove from heat and serve warm. Optionally drizzle with icing or maple syrup.

Notes

Use whole wheat or cinnamon raisin bread for extra flavor.
