This Cinnamon Roll Casserole is a comforting and indulgent breakfast dish that combines soft cinnamon rolls with sweet apple pie filling, all soaked in a rich custard and baked to golden perfection. Easy to prepare ahead and perfect for serving a crowd, this casserole is topped with the signature cinnamon roll icing for an extra touch of sweetness.

  • Total Time: 1 hour 30 minutes
  • Yield: 8 servings

Ingredients

Cinnamon Roll Layer

  • 2 cans refrigerated cinnamon rolls (12.4 ounces each)
  • 1 can apple pie filling (21 ounces)

Custard Mixture

  • 4 large eggs
  • ⅔ cup heavy cream
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon apple pie spice
  • Pinch of salt
  • Cooking spray (for greasing the baking dish)

Topping

  • Icing packets included with cinnamon rolls (reserved)

Instructions

  1. Preheat and prepare dish. Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Prepare cinnamon rolls. Open the cans of cinnamon rolls and set aside the included icing packets for later use. Separate the rolls and cut each roll into 4 pieces.
  3. Combine rolls and apple filling. Place all the cinnamon roll pieces into the prepared baking dish. Add the entire can of apple pie filling over the cinnamon pieces and gently stir to combine evenly.
  4. Make the custard. In a large bowl or measuring cup, whisk together the eggs, heavy cream, vanilla extract, apple pie spice, and a pinch of salt until fully combined and smooth. Pour this custard mixture evenly over the cinnamon roll and apple filling mixture. Gently stir with a spatula to ensure all pieces are coated with custard.
  5. Rest or refrigerate. Allow the casserole to rest at room temperature for 30 minutes to absorb the custard. Alternatively, cover and refrigerate overnight for a more hands-off preparation and enhanced flavor absorption.
  6. Bake the casserole. Bake in the preheated oven for 35 to 40 minutes until the casserole is golden brown on top and set in the center.
  7. Cool and serve. Let the casserole cool for 5 to 10 minutes before drizzling with the reserved icing from the cinnamon rolls. Serve warm and enjoy!

Notes

  • Apple pie filling adds sweetness and texture; you can substitute with peach or cherry pie filling for a different twist.
  • Resting the casserole longer (even overnight) improves custard absorption and flavor.
  • Use full-fat heavy cream for best texture, but half-and-half can be substituted for a lighter casserole.
  • The casserole can be refrigerated and reheated in the oven for leftovers.
  • Cooking spray or butter can be used to grease the baking dish to avoid sticking.
