Ingredients

For the chocolate cake layers:

½ cup vegetable oil

1 cup boiling water

For the banana cream filling:

2 ripe bananas, mashed

8 oz cream cheese, softened

½ cup unsalted butter, softened

1 ½ cups powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For garnish:

Sliced bananas

Instructions

  • Prepare the chocolate cake layers: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla, and mix until smooth. Gradually add the boiling water, mixing until well combined. The batter will be thin. Divide evenly between the pans.

  • Bake the cakes: Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.

  • Make the banana cream filling: Beat the cream cheese and butter until smooth. Add powdered sugar and vanilla, and continue beating. In a separate bowl, whip the heavy cream to stiff peaks, then fold it into the cream cheese mixture. Finally, fold in the mashed bananas.
